Recipe: sugar free, carb free, low fat, high protein brownies

Ever since high school, I’ve kept a very disciplined diet. It’s completely habitual by now, to the point where it doesn’t even occur to me to view food as anything other than “fuel” most of the time.

What is your favorite meal?

The holidays can always be a difficult time for me, not because I feel “temptation” but just because everyone around me is so annoying: pressuring me to “try this” or “try that” and partake in the fun and decadence of Thanksgiving or Christmas dinner.

Finally, one day in 2009, I said: “Screw it! I’m going to come up with a way that I can keep my clean diet and still look like I’m not alienating people during holiday parties!”

The result? My recipe for sugar free, carb free, low fat, high protein brownies!

RECIPE FOR BROWNIES….Sort Of

1/2 cup cocoa powder
1/3 cup of canned pumpkin
1 can (15 ounces) black beans, drained and rinsed
1-1/4 cups splenda or equal
4 egg whites
1/2 teaspoon baking powder
1 teaspoon vanilla

Preheat oven to 350 degrees. Butter (or spray) an 8 x 8 inch or a 7 x 11 inch baking pan. In a large food processor or blender, combine all ingredients. Blend well until very smooth. Pour batter into pan. Bake 35 – 40 minutes or just until set in the center. Do not over-bake.

DISCLAIMER: It has been so long since I have had real brownies, that I have no idea what they taste like. These brownies taste fine to me. My friends tell me they taste like “sadness”.
